HERB FRITATAS

This recipe calls for eggs that do not have “runny” yolks. This is not recommended on the program but an occasional egg with a cooked yolk can be a treat. Enjoy!

INGREDIENTS:

3 Eggs

I Tablespoon each chives and basil leaves, chopped

1 Teaspoon fresh thyme leaves

1 Teaspoon parsley

2 Tablespoons fresh grated raw cheese

2 Tablespoons organic heavy cream

Sea salt and pepper

About 2 Tablespoons extra virgin olive oil

Preparation

Mix eggs with herbs, cream and seasoning. Heat a skillet and brush with olive oil

Pour 1/4 cup egg mixture into the pan and tilt the pan to spread the mixture. When the fritata has set, flip over to brown the other side.

Sprinkle with cheese while still warm.
