This recipe was given to me by a friend. I made adjustments to the ingredients so it makes a perfect Nutritional Balancing meal. This is quick and easy but very delicious. It is one of my favorites.

Red Quinoa Soup

1 lb of chicken or lamb sausage free of pork casing

1 Onion

3 to 4 cloves of garlic

Red Pepper flakes (optional)

Sea Salt

4 to 6 cups of vegetable of chicken stock

6 cups of cup and cleaned kale without stems

2 cups of cooked beans or lentils (I like white beans but any will do)

3/4 to 1 cup or organic red quinoa

Place the onion and minced garlic in a stock pot with the sausage. Season with red pepper flakes for a little kick if you like. Add sea salt to taste. Cook together until the sausage is lightly brown.

Add the chicken stock, beans, kale and quinoa and cook for 45 minutes to 1 hour. If you prefer a thicker recipe use less stock and more quinoa for a stew type dish. More stock will make the dish soupier. Either way this is great dish that your whole family will love.
